Open and easy


Open sandwiches are the perfect quick lunch for the Danish. And the Nordic way suits me fine. I became a fan since my nutrition college days, when I used to go to the Scandinavian Kitchen, where they have a variety of healthy combinations. My recent visit to Copenhagen inspired me to try some versions of open sandwiches at home. I prepared one for myself today and, even though there wasn’t much in the fridge, the result was delicious (you can be very creative with the toppings). As I didn’t have many ingredients to explore this time, I will return with more ideas.

For now, here is the one I made today. Hope you enjoy it as much as I did.

Open sandwich with curried chicken topping
serves 2 - 4 (depending on how hungry you are)

A wholesome meal full of protein and fibre.

INGREDIENTS

50 ml plain sheep yogurt
1 tbsp curry powder
1 tbsp fresh lime juice
½ tsp sea salt
500-600g shredded skinless cooked chicken (you can use leftover)
1 spring onion, thinly sliced
1 organic apple, pitted and diced
1 celery stick, chopped finely
Fresh coriander leaves

METHOD

Mix all the ingredients above and serve on rye bread.

Chicken (Gallus domesticus): It’s a rich source of protein. Choose organic or free-range chicken, it is healthier and it will not only taste better but also you won’t be supporting the inhumane battery farms. It provides vitamins B3 (prevention against cell damage) and B6 (for cardiovascular health), besides iron, selenium (essential component of major metabolic pathways) and phosphorus (maintains the health of teeth and bones). Eating chicken helps the immune system.

Natural yoghurt: It boosts immunity and is very helpful in cases of stomach ulcers. It is high in protein, natural fats and calcium. It is a natural source of probiotic activity (live friendly bacteria) that enriches the intestinal flora, maintaining a good digestive system.

Rye bread: is a great source of insoluble fibre, which helps to prevent gallstones and lower cholesterol. Fibre has the ability to bind to toxins and help eliminate them from the body. Rye contains potassium, calcium, iron, magnesium, vitamin B1, B3, folic acid, and it’s full of antioxidants.
